Ingredients:

• ¼ purple cabbage, cut into strips, thoroughly washed to remove color, and well dried

• ½ white cabbage, cut into thin strips

• 1 can of canned corn

• 3 heaping tablespoons mayonnaise

• Juice from ½ lemon

• 1 teaspoon salt

• 1 teaspoon garlic powder

• ½ fresh chili pepper, sliced into thin rings

• ½ cup chopped cilantro

For the topping

• 1 teaspoon cayenne pepper or hot paprika

• Fresh cilantro, chopped

Preparation:

1. Drain the corn kernels and transfer to a bowl. Mix together with all the vegetables, spices, mayonnaise, and lemon juice.

2. Transfer to a serving bowl, sprinkle a little cayenne and chopped cilantro on top.
