Sometimes, when it comes to kids, the simplest is also the most effective – and the tastiest. Just like these pizza rolls.
These are soft rolls that, when the dough is rolled out, are filled with a mixture of tomato sauce, cheese, and olives. They can be prepared in advance and keep wonderfully. Also great for dinner, a picnic, or even for school instead of the generic sandwich.

30 minutes work, 2.5 hours total, easy to make, 12 pieces
Ingredients
For the dough:
3½ cups flour (500 grams)
1 tbsp sugar
1 tbsp dry yeast
1¼ cups water
1 egg
1 tsp salt
3 tbsp olive oil
For the filling:
1 cup thick tomato sauce
1 cup grated mozzarella (or another yellow cheese)
3 tbsp chopped olives / corn / tuna
For baking:
1 egg for brushing
Preparation
How to make pizza rolls:
1. Place all the dough ingredients in a mixer bowl in the order listed (salt and oil last) and knead until you get a uniform, slightly sticky dough. Cover with plastic wrap and let it rise for at least 1 hour and 15 minutes, or until doubled in size.
2. Divide the dough into 6 or 7 equal parts. Roll out each part, spread tomato sauce, sprinkle cheese and olives or another topping.
3. Fold the dough once from each side and seal into a strip. Cut the strip in half and roll each half into a snail-shaped roll – a total of 12–14 rolls. Place them on a baking tray lined with baking paper and let rise for at least 30 minutes, or until the rolls have puffed up.
4. Meanwhile, preheat the oven to 190°C (374°F). Once the rolls have risen, brush with egg and bake for about 30 minutes until nicely golden. Lift one to check that the bottom is baked through. To ensure there’s no raw dough inside, tap on it – if it makes a sound, they’re ready.
5. Let the rolls cool before eating. They can be slightly reheated before serving.
