In their video, food editor Francesca Zani reveals her method for making the creamiest scrambled eggs you’ll ever taste, and she promises: “They’re better than anything I’ve ordered at a restaurant.” The secret? Yogurt or sour cream. Yes, you heard right.

But even before you grab the pan, there’s an important step almost everyone skips: Salting the eggs before cooking — right when you whisk them. Then, let the mixture rest for 10 to 15 minutes. Why? Because it breaks down the proteins and creates a much more delicate mixture.

After resting, add a small teaspoon of Greek yogurt (or sour cream) to the mixture, stir well, and heat a pan with a small knob of butter over medium-high heat. Once the butter melts, pour in the eggs, wait a few seconds, and then gently “push” with a spatula — not fast stirring.
